Can You Have Air Conditioning in a Commercial Kitchen?

Air conditioning is perhaps one of the most common questions we hear in the early stages of planning a professional kitchen, and one of the most telling. Can you have air conditioning in a commercial kitchen? Because, really what is being asked, underneath the practicalities and legal requirements, is: does my team need to work in unduly hot conditions? 


The short answer is no, they do not. A well designed industrial or restaurant kitchen can be a genuinely comfortable place to work, even in the middle of a packed Friday night service in August. The longer answer is that getting there requires thinking about ventilation much earlier in the process than most people do, and understanding that air conditioning and extraction are not the same thing, even if both involve moving air around a room.


The human cost of a kitchen that runs too hot

Kitchen work, whether you are a high end restaurant, a fast food shop or a country pub, is a physically demanding job at the best of times, without the environment working against the people in it. Kitchen staff operate almost constantly in a state of sustained focus and time sensitive pressure, all while being on their feet for extended periods, in a space full of multiple pieces of heat generating equipment. It shouldn’t come as a surprise that the ambient temperature climbs quickly. And with the extra heat comes the cognitive effect on the humans in the room: concentration falters, mistakes creep in and the quality of what comes off the pass begins to reflect this slip. Left to escalate, a hot kitchen can become a slower, less productive one.


Another effect of an overly stuffy kitchen is how it influences staff retention, and yet this is rarely considered in the early stages of kitchen design. The hospitality industry already faces challenges holding onto good people. A kitchen that is genuinely unpleasant to work in gives talented chefs one more reason to look elsewhere. Good commercial kitchen ventilation, and yes, air conditioning where it is appropriate, is not a luxury. For many operators it is part of what makes a kitchen somewhere people actually want to show up to.


So what ventilation do I need in a commercial kitchen?

Here is the thing that catches a lot of new operators off-guard. Ventilation cannot be bolted on at the end of a kitchen design. It has to come first, because it has the potential to shape everything else. From the position of the cooking line, the routing of the ductwork, the position of the canopy hood, even  the ceiling height, all of these decisions have to be made before the ovens are specified, not after. Kitchens that try to retrofit a compliant extraction system around equipment that has already been placed tend to end up with compromises that cause problems for years.


What ventilation you need in a commercial kitchen is determined by the size of the space, the type of cooking, and the volume of covers. The design standard that governs this in the UK is DW172, which sets out specifications for airflow rates, canopy sizing and grease filtration.


As a general benchmark, a commercial kitchen ventilation system should deliver at 30+ air changes an hour, but a vast majority of busy or large kitchens will need a lot more. Legally, the framework is a patchwork of different regulations. Here are the basics that  Environmental Health Officers will check during inspections:


  • DW172 Standard: The primary design standard in the UK setting out precise specifications for airflow rates, canopy sizing, and grease filtration.

  • The Workplace (Health, Safety and Welfare) Regulations 1992: Governs the provision of a safe, comfortable working temperature and sufficient fresh air.

  • The Gas Safety (Installation and Use) Regulations 1998: Requires adequate ventilation to prevent the buildup of dangerous combustion fumes.

  • The Health and Safety at Work Act 1974: Places an overall duty of care on operators to provide a safe working environment.


Ignoring these requirements or simply hoping your kitchen stays cool during the summer isn't worth the risk to your compliance or your staff retention.


A note about fresh air

The fresh air supply that replaces what the extraction is removing is known as Make-up air, and it matters a lot more than people often realise. A kitchen extraction system is constantly pulling large volumes of air out of the room. Without an adequate supply of fresh air coming in to replace it, the kitchen effectively starts trying to breathe through a closed window. Doors become hard to open, gas appliances can behave unpredictably, and the atmosphere quickly becomes stifling for everyone working in it. Good commercial kitchen ventilation is a balanced system, not just a fan in a hood that takes away hot air and lets an AC unit do the rest. 


Yes, you can have air conditioning in a commercial kitchen

And in many cases it is one of the more meaningful investments an operator can make in the people who work there. The key is understanding that it works alongside the extraction system rather than doing the same job. Extraction removes contaminants, grease, smoke and combustion fumes at source. Air conditioning manages the ambient temperature of the room. Both matter, and a kitchen designed to have both working together from the start performs very differently from one where air conditioning has been added as an afterthought.


For the majority of commercial kitchens, a split-system unit is usually the most practical starting point. As well as being relatively straightforward to install and unobtrusive when in-situ, it is also powerful enough to make a genuine difference through a long summer service, which is definitely something that new restaurants are going to want to consider.


Larger operations may need something a bit more involved, and that is exactly the kind of conversation worth having with a specialist at the design stage, before decisions about layout and equipment have already been locked in.


Commercial kitchen heat recovery: the investment that pays for itself

For kitchens being designed from scratch, commercial kitchen heat recovery is worth bringing into the conversation right from the planning stage. Mechanical Ventilation with Heat Recovery (or MVHR) captures the thermal energy from warm extracted air and transfers it to the incoming fresh air supply, without the two air streams ever mixing. Incoming air arrives far closer to ambient temperature, the cooling system has less work to do, and energy bills reflect it.


A well-specified MVHR system can recover upwards of 85% of heat that would otherwise leave the building through the extraction ductwork. For a kitchen running extraction continuously across multiple services every week, that adds up to a meaningful reduction in energy costs, with typical payback periods of between two and five years. It also makes the kitchen a more consistently comfortable place to work in, sometimes negating the need for air conditioning altogether.


Getting your kitchen ventilation right from the start 

Decisions made at the design stage of a kitchen, from where everything is positioned, how the systems are specified and how ventilation will be integrated, all of this shapes how the kitchen will perform -and how the team using it will feel during a shift- for years to come. If done well, these are not details that will need revisited further down the line, but will stand as the strong foundations for a well run, and successful, commercial kitchen.

Effective extraction and ventilation are a legal requirement. Air conditioning, specifically, is not. However, it is increasingly seen as an essential investment, especially in urban locations where heatwaves can have an acute effect on human activity, and can be factored into a plan for staff retention. 


How often does commercial kitchen ventilation need to be maintained?

High-volume kitchens typically need grease filters cleaned weekly and full ductwork cleaned quarterly to satisfy TR19 grease hygiene standards. The right schedule depends on how intensively the kitchen operates, but records of all cleaning activity should be kept ready for environmental health inspections regardless.


Where does air conditioning fit in the kitchen design process?

Ideally, on day one, or at the very least within the same conversation as the ventilation system at the very beginning of the design process.  Neither of these things should be added on once the kitchen has already begun to take shape. By integrating both systems from the outset, they can be planned to work together efficiently, rather than competing for the same ceiling space or ductwork routes.
